Herb Crusted Haddock

A healthy, simple, and incredibly delicious mid-week dinner that will take only 30 minutes from start to finish! Our Lemon Herb Crusted Haddock is bursting with lemon freshness and the unique flavour of tarragon. Baked fish with spinach and tomatoes served with buttery rice seems like an extremely special meal that you can treat yourself to even when short on time or counting calories!

Ingredients

  • 2 tbsps Parsley (chopped)
  • 2 tbsps Fresh Dill (chopped)
  • 2 tbsps Bread Crumbs
  • 1 Garlic (clove, minced)
  • 1/2 Lemon (medium, juiced, zested)
  • Sea Salt & Black Pepper (to taste)
  • 2 Haddock Fillet

Instructions

  1. 1. Preheat the oven to 400oF (205oC) and line a baking sheet with parchment paper.
    2. In a bowl, mix together parsley, dill, bread crumbs, garlic, lemon juice, and lemon zest.
    Season the mixture with salt and pepper.
    3. Place the haddock fillets on the baking sheet and spoon the herb mixture on top of the
    haddock. Gently press it down.
    4. Bake the haddock for 10 to 12 minutes or until cooked through. Enjoy!

Leftovers
Refrigerate in an airtight container for up to three days.
Fillet Size
One haddock fillet is equal to 150 grams or 5.3 ounces.
Gluten-Free
Use gluten-free bread crumbs instead.
